There are many stories in the city of Lipa that are unbeknownst to any domestic
tourist, and one of them has already begun to showcase what is known to those
who knew as one of the most authentic sensations that the city will be known
for in the near future.
On the first day of October, hundreds in and out of the city flock to a
place that is a result of one of the most endearing love stories I've ever
learned beyond the small and big screens and try out something that is rarely
offered among tourists - an authentic gelato that has ever tasted not only in
the city but throughout the Southern Luzon region as well. Yes, and it is all
found at Koibito's World of Gelato which has been making waves among dessert
lovers since it began offering Italian pints to partner shops and restaurants
in 2015.
Koibito's is Roger Monsale's own way of interpreting the love for his
wife Angelina Lantin-Monsale into an opportunity that he wants to share with
his friends and loved ones in the city. Inspired by his own experience of
tasting milk and ice cream in California, Roger studied at a prestigious university
in Bologna, Italy that specializes in teaching students how to make gelato in
order to offer what he thinks is the best ice cream that will hit the city. His
journey never stopped there as he conducts his own research on what people are
looking for in ice creams and would eventually develop new flavors based on
what he has learned.
With the rising popularity and demand for more flavors and
accessibility, Roger and Angelina Mondale recently opened Koibito's own
standalone shop at the ground floor of the new High 5 Square commercial
building situated at Ayala Highway, Lipa City and the reception was
overwhelming as if the city welcomes the world of gelato with open arms. New
and existing fans can now try out popular and never-before-tasted flavors in a
beautiful and convenient location within the heart of the City For All Seasons all
made with burning passion.
